New Orleans is a city entrenched in French culture and customs. Fat Tuesday gets its name from the name of the day celebrated in France. It's called Shrove Tuesday (Tuesday before Ash Wednesday). The French name Mardi Gras means Fat Tuesday and now it New Orleans its the day that marks the most events.
